Dinner Time: Low-Carb Chili Lasagne

Now that the cool weather is here The Beast can run his oven again!

To lower the carb content of this dish I replaced tortillas with Lavash Whole Wheat flatbread. Simply layer a pan with flatbread, chili and Monterey Jack Cheese. Top with whatever (The Beast used black olives, sliced fresh Jalapenos and diced fresh tomatoes). Bake covered for 45 minutes in a 375 degree oven, then uncover and bake another 15.

My god that looks delicious! I’m definitely going to try it. I’ll probably use the same ingredients that you did except I’ll replace the jalapenos with banana peppers.

Good idea. BTW – the Chili has no beans, it’s ground beef and tomatoes simmered with fried Onions, diced garlic and chopped green peppers.

Spices are Oregano, Chili Powder, Cumin, cilantro and Paprika.

I suggest you go on a corndog diet. Most aren’t very good, so you won’t eat too much. Well, the ocassional one is good.

Congratulations on your new book about blogging, Ted! The Beast will feature it on his blog (con permiso) as soon as he stops being a lazy bum.

The fact that The Beast is in the book doesn’t hurt either.
